Banana Pancake Recipe


Since i am living in Asia, banana is easily available... especially if my parents come to visit...they'll sure to bring some. Well, maybe not 'some' , they always bring a lot. That's why, I have to search high n low for the way to finish 'em up. All those new recipes should be very helpful at this time.

So, I came accross this banana pancake recipe, ( a modern form of 'lempeng pisang' I guess). More international. I made some changes. Less sugar, more fibre. ( Isn't most of our new year resolution is to stay healthy???). This recipe serves 4-6 people.
Tried them...love the taste and texture..(but my kids n hubby prefer the traditional 'cekodok'). So, here goes...

Ingredients:
1 cup all-purpose flour
1 tbsp white sugar(if the bananas are very sweet, u can omit this)

2 tsp baking powder

1/4 tsp salt

1 egg

1 cup milk

1/4 cup vegetable oil

2-6 riped bananas, mashed (Asian loves more bananas in this)

1/2 cup rolled oats (optional)


Methods:

-mix all the dry ingredients together.

-mix all the rest until well combined.

-pour the banana batter into the dry ingredients, mix well.

-heat a non-stick frying pan over medium heat.
-pour a scoop of batter.
-cook 1minute each side until golden brown.

-serve immediately.
